Shawarma Pitta With Incredible Chickpea Filling!

Shawarma Pitta

The origins of shawarma can be traced back to the 18th century in Turkey but it is now eaten throughout the world. This shawarma pitta is perfect for anyone that is looking for a light vegetarian snack as the chickpea filling is simply delicious.

There is minimal preparation with this dish so regardless of your skill level you will find it easy to wow your family and friends.

Shawarma Pitta

Shawarma Pitta Ingredients:

For the chickpea filling:

3 cloves of garlic, finely minced
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon sea salt (table salt can be substituted but not recommended)
1 teaspoon turmeric powder
1 teaspoon ground allspice
1/2 teaspoon finely ground ginger
1/2 teaspoon finely ground black pepper
A small pinch of cayenne pepper
3 tablespoons olive oil
2 cups cooked chickpeas – These should be rinsed first
1/3 cup thinly sliced red onion
1/4 cup thinly sliced red pepper

Pita:

2 whole wheat pita bread, if they do not come precut you should cut pockets
1/4 cup hummus
1 to 2 handfuls chopped lettuce
Parsley, if desired for the topping

Shawarma Pitta Method:

Preheat your oven to 400˚ F or 200˚ C.
Take a medium to large bowl and add the minced garlic along with the various spices
Stir in the olive oil and keep mixing until a stir until a paste has been created.
Stir in the chickpeas, red onions, as well as the red pepper, use a spatula to toss and coat.
The whole chickpea mixture can now be put into a roasting pan which you should cover with foil.
Place in the oven for 30 minutes, at the end of the thirty minutes the chickpeas should be hot and the onions tender.
Put a slice in each pita to form a pocket and heat the pita until just they are warm enough.
Open the pocket on the bread and evenly spread 1 tablespoon of hummus in each.
Add a good of lettuce to each along with 1/4 of the chickpea mixture.

When serving you can serve with the remaining chickpea mixture and maybe some hummus and feta.

This fantastic dish can be served as a light meal or as part of the main meal on a hot day.
